Salad with Lemon Mint Vinegraitte

We decided to be healthy today and had a large serving of vegetable salad. Felt good after eating it. Should do this more often. I've experimented with the mint leaves (dried) and the result was quite nice. Will have to try fresh mint leaves using the same recipe the next time.

Here's the recipe for the lemon mint vinegraitte:

Rice Vinegar - 2 tbsp
Olive Oil - 2 tbsp
Lemon Juice - 1/2 lemon
Sugar - 1 tbsp
Pepper - a dash
Mint Leaves - 2 tbsp
Salt - a pinch
Cilantro - a few stems, chopped finely



Mix them all together & refrigerate. Serve with fresh vegetables of your choice.
