Rice Noodles with Seaweed & Minced Meat in Ikan Bilis Soup

We probably have to pay a lot for this meal should we go to a chinese restaurant in Dubai. This noodle soup got good review from hubby - so, it's something worth repeating.

Again, another simple meal to prepare - I used the pork soup I made for Hannah as the broth and base for the soup, added some Ikan Bilis and boil till the soup is fragrant (you can smell the anchovies). Sieve the soup so that you get a clear soup. Add in vegetables (I used lettuce) and seaweed.

For the meat, I used minced meat, stir fried with lots of garlic and onions. Add in seasoning - light soy sauce, dark soya sauce, oyster sauce, sugar, salt and pepper to taste.

Boil rice noodles or any noodles of your choice in a separate pot. Place boiled noodles into soup base. Place the meat onto top of noodle soup and garnish with cilantro if you like.

Serve hot.
